Immune-Boosting Curry Recipe
Here is a recipe for a hearty and flavorful curry that includes several of the immune-boosting foods mentioned in my previous article: “Immunity Boosting Foods to Eat This Winter”
Immune-Boosting Curry
Ingredients:
1 tablespoon olive oil
1 medium onion, diced
2 cloves garlic, minced
1 tablespoon ginger, grated
1 medium sweet potato, peeled and diced
1 cup leafy greens (such as spinach or kale), chopped
1 cup diced tomatoes
1 cup coconut milk
1 teaspoon turmeric
1 teaspoon cumin
1 teaspoon coriander
1/2 teaspoon cayenne pepper (optional)
1/2 teaspoon salt
1/2 cup water
1 cup cooked turkey, shredded
1/4 cup chopped cilantro for garnish
Instructions:
Heat the olive oil in a large pot over medium heat. Add the onion and cook until it is translucent, about 5 minutes.
Add the garlic and ginger and cook for an additional minute.
Add the sweet potato, leafy greens, tomatoes, coconut milk, turmeric, cumin, coriander, cayenne pepper (if using), and salt to the pot. Stir to combine.
Add the water to the pot and bring the mixture to a boil. Reduce the heat to low and simmer until the sweet potato is tender, about 15-20 minutes.
Add the cooked turkey to the pot and stir to combine.
Garnish with chopped cilantro and lime and serve over rice or with naan bread. Enjoy!
